A petillant naturel made from 100% Pinotage. This is a single ferment sparkling wine (not a twice fermented like MCC). Fruit was from a 20yo block and was wholebunch pressed and fermented in old oak. Bottled after 10 days to finish fermentation in bottle. Aged on lees for 5 months before being disgorged. Some harmless sediment remains.
Pale pink in colour, with a lovely gentle mousse that is not overly intrusive. Shamelessly aromatic with primary fruits like strawberry, raspberry and plum. The palate is light and ethereal, with just enough fruit weight to carry the acid and bubbles. Dry and refreshing.
