VINEYARD AND SOILS:
The Chardonnay was selected from various two sites from Robertson and the vineyards are grown on weathered shale, with rich limestone deposits ensuring a terroir-driven approach to winemaking. Pinot Noir was selected from two different geographical climates, Elgin and Paarl regions, with a combination of decomposing granite and Table Mountain Sandstone.
This vintage 2016, a blend of Chardonnay and Pinot Noir was from an elegant vintage. This release offers wonderful balance, ripe fruit and restraint. The Chardonnay and Pinot Noir were hand-selected and hand-picked. After whole bunch pressing with the separation of cuvee from the taille the clear juice was all fermented in stainless steel at 16 ˚C. After the first fermentation, the wine was blended and prepared for secondary fermentation in the bottle. The wine was currently still on the lees (now 54 months) and is ready for remuage and dégorgement. Once this process is complete a short cork maturation will be considered.
A refined, light golden straw colour with a fine beady mousse. Pronounced and rich yeasty tones, layered with bright cherry and black berry fruit aromas, from the Pinot Noir, with hints of green lime zest from Chardonnay. and bright cherry berry flavour from Pinot Noir. Brilliant brightness for the age of this Cap Classique with well-structured layers of brioche and integrated mousse. Bright long lingering finish with intensity.
