The Sleeping Co-Pilot 2025 is 100% Viognier, fermented as whole bunches and left on its skins for fourteen days. It spent around eleven months in older 500-litre barrels.
Jurgen uses the stems to contribute structure and spice, broadening the wine beyond Viognier’s natural aromatics. Alongside the skin-contact Chenin Blanc, Elementis, it shows how differently varieties respond to similar cellar techniques.
“Orange, hints of honeysuckle and potpourri, herbs and slight terpene note. Rich and broad with moderate acidity and a grippy finish.”
