Pierre Gimonnet & Fils is a family-run grower based in Cuis, a Premier Cru village in Champagne’s Côte des Blancs.
The Gimonnet family has lived in Cuis since the seventeenth century and has worked vineyards in Champagne since around 1750. Pierre Gimonnet began selling wine under the family name between the two world wars, and his son Michel joined the estate in 1955.
Michel introduced separate vinification for individual parcels, using small stainless-steel tanks to understand the character of each site before blending. Today, his sons Didier and Olivier continue to run the estate.
The family now works 29.4 hectares across Cuis, Cramant, Chouilly, Oger and Vertus. All the grapes used by the estate come from its own vineyards, and all the wines apart from Rosé de Blancs are made entirely from Chardonnay.
Chardonnay in the Côte des Blancs
The Côte des Blancs runs south of Épernay and is Champagne’s most important area for Chardonnay. Its chalky soils produce wines known for freshness, fine acidity and a distinctive mineral character.
Gimonnet works across several Premier Cru and Grand Cru villages, each bringing something different to the wines.
Cuis Premier Cru forms the backbone of the house style, providing freshness and lightness. Cramant brings depth and fine chalky structure, while Chouilly tends towards fruit and elegance. Further south, Oger produces broader, more structured Chardonnay with a smoky, flinty character.
Blending remains central to Gimonnet’s approach. Even when a Champagne comes from one village, the family may combine several parcels and different vine ages to create a more complete expression.
An unusual reserve-wine system
Non-vintage Champagne combines wine from the latest harvest with reserve wines from earlier years. These older wines help the producer maintain consistency and add complexity.
Pierre Gimonnet takes an unusual approach to its reserves. Since 1982, the estate has stored them in bottles on fine lees under low pressure, rather than in tanks or barrels.
This limits oxidation while allowing the wines to develop. The Cuis Premier Cru Brut can contain more than 50 individual components from at least five harvests.
It is a detailed process for the estate’s introductory Champagne, but it helps explain the combination of freshness, texture and depth found in the finished wine.

Made entirely from Chardonnay, the current blend draws on eight harvests stretching from 2022 back to 2010. The wines are fermented in stainless steel, blended with the bottled reserves and aged on the lees for a minimum of 21 months.
Expect citrus, green apple and white flowers, supported by a fine mousse and a chalky, refreshing finish.
Pierre Gimonnet ‘Brut Extra 1er Cru Blanc de Blancs’ Chardonnay NV
Brut Extra begins with the same basic blend as Cuis Premier Cru but receives a lower dosage and additional time on the lees.
It is made entirely from Chardonnay grown in Cuis and spends at least three years ageing on the lees. A dosage of 4g/l keeps the wine dry while allowing enough texture to balance its acidity.
Lemon and green apple lead into a firmer, more savoury and distinctly chalky finish.
Pierre Gimonnet ‘Rosé de Blancs 1er Cru Brut’ Chardonnay / Pinot Noir NV
Rosé de Blancs turns the usual structure of rosé Champagne around.
Instead of building the wine around Pinot Noir, Gimonnet uses 94% Chardonnay, with just 6% Grand Cru Pinot Noir from Bouzy bringing colour and red-fruit character.
The Chardonnay comes from Cuis, Vertus, Villeneuve, Chouilly, Cramant and Oger. After 18 months on the lees, the wine combines strawberry and redcurrant with citrus, chalk and the fine structure of a Blanc de Blancs.
Pierre Gimonnet ‘Oger Grand Cru Brut Blanc de Blancs’ Chardonnay NV
Oger Grand Cru shows a broader and more structured side of Côte des Blancs Chardonnay.
Gimonnet began working with vineyards in Oger in 2005. After several harvests, the family found that the village’s character was sufficiently different from its usual blends to warrant a separate bottling.
This non-vintage Blanc de Blancs comes from four plots in Oger Grand Cru and includes 10% reserve wine. It spends two years on the lees before release.
There is still plenty of freshness, but the wine has more weight than Cuis, with citrus, white fruit and a smoky, mineral finish.
