Joostenberg’s debut Rosé is a demonstration of regenerative viticulture, made from organic Mourvèdre and Syrah nurtured by winter sheep grazing. Fermented in concrete “eggs” and stainless steel, Song of the Soil is a pure, minimalist tribute to the granite and clay shale terroir that defines the estate.
Pouring a delicate pale salmon, this wine balances vibrant pomegranate and watermelon aromas with a subtle, leesy creaminess. At a gentle 11.88% alcohol, it is a dry and textured expression that trades typical sweetness for refined elegance and a deep sense of place.
