Sourced from three Chardonnay parcels (Robertson, Darling, Durbanville) and two Pinot Noir parcels (Napier and Stellenbosch).
The nose is light, airy and generous, with buttery richness and subtle herbal notes of basil and mint. The palate opens with lime zest and brightness from Chardonnay, finishing with a gentle lift of red berry fruit from Pinot Noir. Primary and expressive, yet grounded by extended lees contact.
The name ‘Birdsong’ nods both to Pieter’s long love affair with sparkling wine, and to Sebastian Faulks’ novel, a quiet reference to patience, time, and devotion.
“71% Chardonnay (Malmesbury, Robertson, Paarl, Napier) and 29% Pinot Noir (Darling, Paarl). Primary fermentation in a combination of stainless tank, ceramic pots and barrel. 39 months on the lees. The nose shows floral perfume, a hint of reduction, and suggestions of citrus and strawberry.
