This wine is made from two distinct vineyards: Stellenbosch Kloof and Devon Valley. The Stellenbosch Kloof grapes provide richness and citrus notes, while the Devon Valley grapes, grown in clay-rich granite soils, contribute weight and texture to the final blend.
In the cellar, the grapes are whole-bunch pressed and left to settle overnight. The Stellenbosch Kloof wine is fermented and aged for nine months in old French oak barrels, whereas the Devon Valley wine undergoes natural fermentation at cold temperatures and spends nine months in stainless steel tanks.
Not your average Chardonnay, steely, citrussy and fresh.
