Hey Mila! 2026 is 100% Mourvèdre from the Swartland, made as a pét-nat. Short for pétillant naturel, the method allows the wine to finish fermenting in the bottle, trapping the gas produced by fermentation to create bubbles.
The wine spent five months on its lees before disgorgement, the process of removing the sediment. Jurgen describes it as the drier of his two pét-nats, with fine bubbles part of the intention. He points to the work involved in monitoring fermentation, choosing when to bottle and getting disgorgement right.
