Sybille. 2026 is a Swartland pét-nat made entirely from Pinotage. Pét-nat is short for pétillant naturel: the wine finishes fermenting in the bottle, trapping the gas produced by fermentation and creating bubbles.
The 2026 spent five months on its lees before disgorgement, the process of removing the sediment. Jurgen describes fine bubbles and freshness as central to the wine, while emphasising that there should be an enjoyable wine underneath the fizz, one that holds your interest after the bubbles have faded.
