“Grapes sourced from two Paardeberg vineyards on granite soils and a third site west of Malmesbury on iron. The nose opens with a subtle yeasty note before unfolding into layers of citrus, peach, potpourri, dried hay and herbs. The palate is pure and finely etched, carried by lively acidity and a pithy finish that stops short of austerity. The aromatics are complex and compelling, moving from flinty reduction to beeswax, flowers and herbs, then all manner of fruit – citrus, apple, stone fruit, mango and pineapple. “80% of the grapes from Simonsberg, 20% from Helderberg. Matured for 10 months in older oak. Lemon plus hints of oatmeal, vanilla and reduction on the nose. The palate is composed – neither too powerful, nor too taut – with excellent fruit concentration and bright acidity. “From Devon Valley. 100% whole-bunch fermented in stainless steel before 10 months of maturation in concrete tanks. Gorgeous aromatics of violets, lavender, a hint of fynbos, black berries and pepper. Dense fruit, fresh acidity and powdery, tightly packed tannins. Succulent, vital, emphatically dry on the finish. “From Lower Helderberg vineyards, one planted in 1968 and the other in 1988. Partial whole-bunch fermentation. Matured for 11 months in older 225- and 400-litre barrels. Cranberry and raspberry on the nose plus hints of floral perfume and spice. Excellent fruit purity, bright acidity and fine, chalky tannins, the finish long and utterly dry.
