‘Swembad’ comes from a single Chenin Blanc vineyard at Geluksoord in Stellenbosch, grown by Jacques du Bois. Planted in 1989, the vineyard is certified under the Old Vine Project.
The grapes were harvested early on 31 January to preserve acidity and support ageing in bottle. Whole-bunch pressing was followed by fermentation with naturally occurring yeasts in stainless steel. The wine then spent eight months on its fine lees, the yeast sediment left after fermentation, in neutral 500-litre barrels.
Spontaneous malolactic fermentation and time on the lees contribute texture and complexity, while early picking keeps acidity central to the wine’s structure.
