This Old Vine Chenin Blanc is sourced from the South-western part of Paarl. The hand-picking of the grapes was staggered to capture the natural acidity of the fruit and a riper flavour profile.
The hand-harvested grapes were picked and pressed during the cool morning hours. After a short overnight settling, the juice was transferred to stainless steel tanks and spontaneous fermentation occurred. After fermentation, the wine was kept on the lees for a further 5 months. Resulting in a wine that the Myburgh brothers hope are pure and honest.
