This 100% Sauvignon Blanc from the Sondagskloof appellation was crafted using two different winemaking methods. Half of the grapes were fermented on their skins for three weeks in an open-top fermenter, while the other half were whole-bunch pressed and fermented in older French oak. Both parcels were aged on their lees for 10 months to build complexity before being blended and bottled.

“100% Sauvignon Blanc. 50% given skin contact for approximately three weeks before maturation lasting 10 months in new 500-litre French oak barrels, 50% fermented in older barrels. Complex aromatics of blackcurrant, fennel, white peach and nectarine plus hints of green pepper, honeydew melon and granadilla. The palate is not so much lean as tightly wound with crisp acidity and a super-dry finish. An intellectually demanding proposition as ever. 95/100 ”

Situated behind Stanford east of Hermanus, this secluded valley is home to only two farms.

50% of grapes were fermented warm on skins in an open top fermenter with daily punch downs until dry after which it was basket pressed and racked to new 500L French oak. The other 50% was whole bunched pressed and fermented in older French oak. Both parcels were batonaged for a month after primary fermentation and then left on the lees till blending took place 10 months later. Bottling took place at the end of January 2024.
