100% Chardonnay. Elgin WO
Hand picked grapes spent the night in the cool store before being partially destemmed and slightly crushed. After which the wine spent 10 months in 70% old french oak barrels.
Pale lemon straw colour with a nose of white ripe stone fruit, melon, citrus and bruised apple with almond flavours from the wood. Some undertones of river stone and hay with a touch of white chocolate. On the palate, the layered complexity of tropical fruit and spices.

Winemaking: Hand-picked grapes in small 18 kg boxes, one night in the cool store (10°C) and than destemmed and slightly crushed.
The grape-skins were slowly pressed in our stainless steel basket press (JLB 5). Spontenous fermentation French barrels (30% new) and 5% malolactic fermentation.
Maturation: 100% barrel fermented Chardonnay, 10 months on its nature fine lees and racked to a stainless steeltenk for another 2 months before bottling.
