74% Sauvignon Blanc – 26% Chardonnay

Lemon straw with a nose of white stone fruit, ripe peach, ginger, citrus and the zest of grapefruit with some almond flavours from the wood. On the palate, the layered complexity of tropical fruit and some eartiness accents. A nice acidity that is covered with a little drop of sweetness to make the whole structure of the wine more appealing.

Age of the vines: 13 years
Trellising: Lyre system & cordon on steep terraces

Winemaking: Hand-picked grapes in small 18 kg boxes, one night in the cool store (10°C) and than destemmed and slightly crushed.
The grape-skins were slowly pressed in our stainless steel basket press (JLB 5). Spontenous fermentation in stainless steel tanks and in barrels

Maturation prior to release: 74% barrel fermented Sauvignon Blanc, 9 months on its nature fine lees + a few
barrels Chardonnay (4).
Blended and aged for an extra 3 months.
