Made entirely from Palomino, this Oloroso has an average age of twenty years in American oak through the solera system. Fernando de Castilla describes hazelnut, walnut and subtle orange-peel notes, with a long, dry finish. It recommends serving at 12–16°C with dishes such as stews or mature cheese. This is the bottle for a closer look at extended oxidative ageing.
